Okay, so we all know I’m a little behind on blogging. I started a new job on Monday and I’m EXHAUSTED. I’ve had a severe headache every day when I get home and my muscles are hurting me something fierce. I’ve had SO much going on lately, I feel like I’m just spinning my wheels because I can’t seem to get anything done.
At any rate, here’s a couple of things I made last week that were DE-licious!! Simple, quick, and relatively healthy.
4 chicken breasts (or however many you want, based on how many people you’re cooking for)
4-6 strips of bacon
salt and pepper
coconut palm sugar
Preheat the oven to 400 degrees. Cut the chicken breasts in half, or maybe more depending on how large they are. I buy hormone free and antibiotic free ones, so they are “normal” sized breasts and I only have to cut them in half. I sprinkle each side of each piece with salt and pepper to taste, as well as some chili powder and garlic powder to taste. It would probably amount to 2 tsps of each is what I’d guess.
Then I wrap each piece of chicken in a strip of bacon. Following that, I dredge the whole thing through the sugar, making sure to cover it well.
Bake in a 9 x 13 baking dish, coated with cooking spray, for about 30-40 minutes, again depending on the size of your pieces. Check it at 20 minutes and flip over.
In the meantime, prepare your veggies and another 9 x 13 pan, coated with a little olive oil. Spread the veggies in the pan and season with whatever you like. I used salt, pepper, and a Greek seasoning blend for everything. Then put those in the oven with the chicken at the same temp for probably the same amount of time. You may not want to do the smaller items right away (like the beans in my photo), and then add them about half way through since they take less time.
Delicious dinner with not too much effort!!
